I drive my car daily to work and it seems there is as growing population of women on their bicycles and I just start laughing hysterically for ages. I just find it amusing how they don't wear helmets and how they stand up on the bike peddling and using all their strength struggling.

Probably for the same reason I find it sooooo amusing that fools like you don't know the difference between "peddling" and "pedaling".

I'm around 5ft and will be bicycling all over campus, a very large campus, and I'm not sure what bike to get.

There are plenty of bikes made specifically for your size and needs. Your best bet is to go to a local shop and start asking questions there. The shop will be able to show you several brands and get you a professional fitting that ensures you have the right frame size.
Don't get caught with only one shop if you can avoid it. Try several different places until you find the bike you like and the staff that meets your needs. Remember, you're spending money so they are working for you so be sure you get exactly what you want.
If you want specific advice... For a campus specific bike you might look for one that can easily take a rear rack. That would offer a flat spot to strap your books while riding. It's not mandatory though since you probably have a backpack you can ride with. You'll need flat pedals, not clipless since you won't be wearing bike shoes to class. You want flat or swept back handlebars, not dropped like a racing bike. You don't need a 10 speed cassette (rear wheel gears) unless your campus is on a mountainside. A single speed cruiser should be fine. But...
If you want to use the bike for something other than just campus cruising you could look at pure mountain bikes. That would get you around school but you could also take it out on weekends to local trails (with a helmet). It would probably cost more and be overkill for short rides but it would definitely be fun.
